The blade is curved to allow the cook to rock the knife on the cutting board for a more precise cut. Most chefs recommend using the largest chef’s knife that is comfortable in the cook’s hands. Steel is heated o over 1,900 °F and poured into a mold to manufacture the Victorinox Swiss Army forged knife collection. Forged blades are known for their strength and sharp blades. The Polyoxymethylene (POM) handle is abrasion resistance and heat resistant.
