Description
This World Cuisine 19.625 by 13.75 inch blue steel baking sheet, with its relatively high flared edges is suited for baking and browning large, dense dough products. The sheet allows for full exposure to the heat of the oven. It is made of 1/16″ thick, black steel.
Blue Steel absorbs heat rapidly rather than reflecting it, which means it ensures perfectly even baking and it is energy saving. Because of all its cooking properties and its strength, baking and pastry professionals use Blue Steel exclusively.
The coating is porous and absorbs fats, this property increases protection against rust and creates a non-stick layer thereby preventing preparations from sticking to the molds. Blue Steel is moisture sensitive, keep it greased, stored it in a dry place and hand wash it for prolonged life.

Blue Steel (also known as carbon steel) must be seasoned prior using it for maximum performance and prolonged life. Pans that are not seasoned will rust due to the nature of the material. I emailed several questions as I was deciding which size sheet pan to order as well as a few questions about the product. I received responses from DEI very quickly. They were very helpful. At the end, I wasn’t sure whether this size would fit in my oven because of the flare of the rim. I called and the gentleman left the phone to measure the width at the flare. I ordered 2 of these baking sheets and they fit in our oven perfectly. rnrnWe have baked pita bread in them as well as roasting vegetables in just the short time we have had them and are absolutely thrilled with our purchase. Blue steel pans are available at a number of other sources but DEI had the best price and their customer service was over the top!
