When you whisk egg whites in a copper bowl, instead of glass or stainless steel, copper ions migrate from the bowl into the egg whites bonding to create a copper salt that increases the temperature to the point when proteins coagulate to help prevent the peaks from falling. Therefore beating egg whites in a copper bowl are less likely to denature (unfold). If you’re doing a lot of cakes and souffles a copper bowl would certainly produce better results.
